One Arse Two Horses

I heard a really great saying recently…

“You only have one arse, don’t try to ride two horses”.

Is this appropriate to your life right now? It is so fricken appropriate to mine.

Over the last few months I’ve had my finger in too many pies, too many balls up in the air, and to be honest I knew I should pick one or two (or three or four) to let drop…but part of me didn’t want to. It made me feel like I had ‘recovered’, that I was now ‘capable’ of taking on the multi-layered life that I thrived on pre-children.

I was always studying, working, training, and at one stage in my final semester (the bloody hardest) in my Nutrition degree I also completed my Massage Qualifications which was on campus 30kms away from my uni campus and I was doing prac at both! Annnnnd I was working part time!

And yet right now, now that I have finally sat my arse firmly on one horse I have never felt so ambitious in my life, never felt so inspired and moved to action, and absolutely never felt so damn calm about the chaos…

I am a stress head by nature and usually I am panicked sick by the overwhelming thoughts of my to-do list. Right now it is pretty simple; devotion to my self-development, a commitment to reducing my chronic pain and getting off pain killers, and of course my loving unwavering commitment to my precious girls and amazing hubby.

Dropping the juggling act at first made me feel incapable, yet I am so completely at peace. I am excited. I feel Bliss.

So, I  dropped the guilt and my own expectations about when and what I should blog about, the frequency, the raw treat recipes, THE (self-imposed) RULES, and I finally feel comfortable with saying I am doing the best I can with what I have, and I own this shit.

All of it, I own it. The baggage, the excuses, and the VISION.

As I sit here typing, and thoughts pop up about the handful of subscribers I lost last week or the friends that never got back to me because I chose to follow my bliss and share the word (through network marketing) about the essential oils that have literally changed my life, and brought me to a place of such determination and purpose, I rub a drop of Spearmint oil onto my throat chakra to give me the courage to express myself confidently.

The Emotions and Essential oils textbook defines spearmint as The Oil of Confident Speech, going further to say that spearmint inspires clarity of thought and confident verbal expression.

Spearmint is also known to act as an antidepressant by relieving mental strain and fatigue, and by being uplifting for the spirit.

Peppermint on the other hand, is defined as The Oil of a Buoyant Heart and reminds individuals that life can be happy and there is nothing to fear.

I have been open about my struggle with postnatal depression and the incredibly difficult year I had whilst pregnant and following the birth of my second daughter and Peppermint is one of the oils I used in my recovery (although I didn’t know that at the time, I just loved the taste in my raw treats and would take a deep whiff every time I would crack the lid open to use it in my ‘baking’).

This is one of the things I love most about essential oils, you don’t need to believe in them for them to still take effect on your physical and mental wellbeing. Once their volatile aromatic compounds are inhaled they get into your blood stream, travel to your limbic system (which controls your emotions, known as the ’emotional brain’) and get to work in an innate way that only organic molecules know how to do. We all know Nutrition 101 right?.., you eat food (an organic compound) and our bodies just know how to digest, assimilate, and absorb the vitamins, minerals, and macronutrients out of that food to nourish and heal our bodies. Essential oils work with our bodies in the same way, you don’t need to tell them how or where to act, they just get on with the job.

Spearmint was a flavor I thought I didn’t like when I was younger, which is weird because it turns out I didn’t even really know difference between spearmint and peppermint until a few months ago when I tried the doTERRA spearmint… and instantly fell in love with it! Funnily enough, most people I speak with about these two oils don’t really recognize the difference either, until they have a smell of them one after another or taste a piece off each end of the slice I am sharing with you today.

Spearmint has a sweeter and milder flavor to Peppermint which in contrast is pretty hot on the tongue, but super cooling to the skin.

The recipe below can use either essential oil. As this is the raw treat I take for participants when I teach my essential oils classes to showcase the versatility of the oils, I like to make the slice half of each flavor. You can simply blend the mixture, remove half and set aside, add a few drops of the oil to the mix left in the food processor and blitz it through then press it into one end of the prepared loaf tin, give the processor bowl a quick rinse and dry then add back into the processor the mix you set aside and add a few drops of the other oil and blitz. Pop it into the other end of the loaf tin and press it all down so there is a different flavor at each end and it might get a little muddled slightly in the middle of the tray.

Raw Vegan Choc Minted Slice with Dark Chocolate Ganache

Raw Vegan Choc Minted Slice with Dark Chocolate Ganache


  • 200g dry dates (soaked in boiling water for 10mins then drained)
  • 250g desiccated coconut
  • 3Tbs Raw Cacao
  • 3Tbs Full fat premium Coconut Cream (I use Ayam)
  • 8-10 drops of Peppermint or Spearmint essential oil*
  • 1/2 cup coconut cream
  • 150g dairy free 70% dark chocolate


  1. Place drained dates, coconut, raw cacao and coconut cream into a high speed food processor and blitz until well combined.
  2. (Thermomix speed 7 for 15secs, scrape down sides then speed 5 for 30 secs)
  3. Press the mixture evenly into a rectangle loaf tin lined with baking paper (overhang the sides so it's easy to pull the slice straight out when set)
  4. Place it in the fridge while you move onto the ganache.
  5. Place the chocolate chips or broken up block into a mixing bowl
  6. Heat the coconut cream in a saucepan whisking continually until steaming (important not to let it boil!)
  7. Pour the cream over the chocolate and leave to sit for a few minutes before stirring until smooth and glossy
  8. Pour over the top of the slice and place back into the fridge for a few hours to set
  9. Enjoy!
